Low calorie and hearty, Taco Soup is one of my favorites. Especially in the winter months. Fresh veggies, beans, turkey chili all in a Mexican style broth… Just throw it in a pot and let the magic happen!
3 cups of Fat Free or Low Sodium Chicken Broth
1 can of Staggs Ranchero Chili 98% Fat Free Turkey (or just regular turkey chili)
1 can of Black Beans (drained and rinsed)
1 can of Mexican Style Tomatoes Crushed
2 tbsp taco seasoning
3 yellow squash – sliced
3 zucchini – sliced
1 med. onion
garlic and seasoning to taste
You can also add corn, mushrooms, more beans etc.
Optional toppings: cilantro, shredded cheese, avocado, low-fat sour cream or greek yogurt
Directions: Saute onions for about 2-3 minutes and then add the rest of the veggies. Cook until the onions are translucent. Add remaining ingredients. Heat thoroughly until veggies are tender about 20-25 minutes.
